The Work at 45℃ series will capture how poor communities face reduced quality of life and livelihoods due to poorly built systems for construction and ad hoc designs.
In this episode: Khowa/ Khoa/ Mawa (sweetened dense whole milk) making entrepreneurs engaged in the trade for almost 40 years in Dharwad explain their process to Peda and Milk Cake making and how heat stress, indoor air pollution and poor ergonomics reduce productivity and efficiency in work.
Everyday, around 300 litres of milk are boiled on a chulha (cookstove) for 6-8 hours at greater than 80℃ temperature. A lot of heat and smoke is generated in the process. The khowa makers spend hours manually stirring the milk on stoves to prevent the content from burning - sitting and standing in awkward positions by the chulha.
Being a home-based livelihood, the old and the young in the house are all involved either in the procurement, processing, packaging or the supplying. Drudgery and heat stress can be felt in the kitchen of the house and as depicted in the video, in the outdoor kitchen space too. The communities do not have the means or guidance to build a better workspace. There is constant need for maintenance - a problem they wish had a permanent solution to.
